Originating in Japan, shirataki noodles are made from the Konjac root, also called White Yam or Devil's Tongue. They have a gelatinous texture and are a good source of the dietary fiber Glucomannan. To make the noodles, the Glucomannan fiber is extracted from the Konjac root and mixed with water and limewater, creating a gelatinous substance called konnyaku which is then formed into noodle-like or rice-like substances.
These noodles are 97% water and 3% indigestible fiber, making them a zero calorie food. They have gained the nickname "Miracle Noodles," and are completely paleo and calorie-free. Shirataki noodles have virtually no taste on their own but have a slight fish-like smell when packaged wet, which is due to the water they are packaged in and can be easily rinsed off. Tip: Konjac deforms in colder temperatures, so do not store it in a low temperature environment.
Shirataki noodles are a high-fiber food yet have no calories and no carbohydrates. The Glucomannan fiber in the noodles is a type of viscous fiber (soluble fiber), similar to what is found in chia seeds, which can absorb up to 50 times their weight in water. This viscous fiber is known as a prebiotic, meaning that it is indigestible to humans but nourishes good bacteria in the digestive system. Glucomannan is also a great source of resistant starch and is sometimes recommended for weight loss due to its no-calorie and high-fiber properties.
In summary, Shirataki noodles are a versatile, healthy, and unique ingredient that can be enjoyed as part of a well-balanced diet. They are approved for various special diets including Keto, Paleo, Gluten-Free, Grain-Free, Vegan, and Kosher, making them an excellent choice for those seeking a low-carb, zero-calorie noodle option.
